Preparation
- In a pan, sauté the Elevo olive oil, garlic, spring onion stalks, and chili.
- Add anchovy fillets and fresh yellow and red cherry tomatoes.
- Add a little water and salt, cover, and let the tomatoes simmer.
- Stir in chopped capers.
- Cook the Calamarata pasta al dente in salted water, drain, and toss in the pan with the sauce.
- Serve with toasted breadcrumbs, a little Parmesan, and a drizzle of Elevo olive oil.
