The winery
Adèo comes from Campo alla Sughera in Bolgheri, the estate founded in 1998 by the German Knauf family after having the soils of the area carefully mapped. The first vintage of Adèo was 2003. Its name comes from a Greek scholar of the third century BC who wrote about art and viticulture.
In the cellar
Hand-harvested in 15 kg crates and fermented for 15 to 20 days in stainless steel at 28 °C. The wine then ages 12 months in French oak barriques and a further 6 months in bottle.
At the table
With red meat, cooked rare, grilled or roasted, with pasta all'amatriciana, beef or game ragù, and hearty risottos. It also pairs well with medium-aged cheese. Serve at 18 °C (64 °F).
